5 eggs + 1/2 cup coconut flour from my motherland (thanks Trader Joe’s for importing from the Philippines)
1/2 stick butter
350 degrees for 15 mins, and enjoy the warm and moist cheesy gooey mess straight from the oven
Mind you, a 1/2 cup of dry coconut flour is 21 grams of carbs s

Mistakes: (hubby tells me i always watch cooking videos but end up fucking up because of my innate need to experiment, a quality that I got from my mother.)
Overdid the crust using an entire 1/2 quarter cup of butter, should have used only 3 tablespoons.
Overdid the eggs too, used 3 instead of just 2.
After it was out it tasted like flan but now that its refrigerated, it turned out fuckin delicious.
the taste of butter is incredible, and it’s mindblowing how I feel so full after eating heavy fats in my meals. so far, I can feel the side effects like feeling the shoulder pain as expected in ketosis, but so far that’s about it. hopefully eating a whole lotta fat helps me long term.
Star of the show: cauliflower cotija and oaxaca casserole, just my fancy way of saying cauliflower mac and cheese hahaha
Word of the not-so wise:
Please DRINK UP your MCT coffee right away as soon as you mix it to coffee. Otherwise you would experience this generously greasy mess!
I made the incredibly ugly mistake of putting it in my coffee carafe (which is not a good product either- thanks, starbucks) and experience the worse—even way worse than spilling coffee.
Actually having to wipe away the greasy oil off my bag and my carafe.
